What exactly causes the damage on our strator coil?

There's a lot of reason why stator fail, it could be due to wiring problem, regulator/regulator rectifier and poor quality materials used in stator windings. It could also be due to monster(mamaw") engine. At higher RPM our rectifier produce higher voltage/current but unused current be rerouted back to stator winding through SCR in regulator / rectifier(shorting the winding when set voltage exceeded).

Over-current and faults (short circuits) are main reasons of stator failures.
Causes of Overcurrent:
1. too many electrical loads on our motorcycle specially non linear loads.
2. fast charging systems.
Causes of Short circuits:
1. Age
2. Improper insulation of repaired/new connection.

What is the output voltage of our stator? and also it's AC right?

afaic, lagpas 20VAC yan paps specially at high revs. Voltage is directly proportional to engine rpm.

at highest RPM, what is the peak voltage?

At this point in time di ko pa masagot to paps. hindi ko pa na test output voltage ni snipey at high revs. However as soon as ma baklas ko uli motor ko ill take some test on its voltage output. for the mean time lets just wait for others who have answers for this. thanks

Thanks sir @chanchad. If ever, we can know the peak voltage of our stator and then we can think how can we harvest more juice on our stator (if possible)..
